This Rigatoni Arrbiata from The Coronet sounds so easy and delicious!
INGREDIENTS:
4 cups diced tomatoes
2 tbs tomato paste
2 tsp chili flakes
1 tsp capers
2 tsp manzinalla olives
1 cup white wine
1 onion
4 garlic cloves smashed and sliced
2 tsp olive oil
1 cup arugula
1 tsp lemon zest
DIRECTIONS:
Heat olive oil in pan. Add garlic and onions. cool until translucent. Deglaze with white wine. Add remaining ingredients plus salt and pepper to taste and cook for 10 mins. Mix in separate pan with desired amount of pasta. Heat and add arugula and lemon zest then serve.
