Elotes are full-flavored ears of corn slathered in Mexican crema, cheese, chile, and hot sauce. Everyone has their own ideal combination of toppings for the perfect Elote.
Elotes are sold by street vendors from trucks all around town. You will be handed an ear of corn spiked on one end with a popsicle stick and slathered in Mexican crema. You will be set free to cover that corn in the hot sauces, grated cheese, and seasonings of your choice from a selection of offerings.
Use either fresh corn ears broken in half or frozen Nibblers, because popsicle sticks can break under the weight of a full ear. The corn on the cob is really just a crunchy, easy-to-hold vehicle for the creamy, salty, spicy, cheesy toppings and frozen works just as well due to its softer texture.
Everybody’s preferred cheese-to-chile-to-crema ratio is different, so for a party, follow the street vendors’ lead and lay the toppings out for everyone to apply as they wish.
INGREDIENTS
3 ears fresh corn, shucked and cut in half, or one 6-count package of frozen corn on the cob, such as Green Giant Nibblers
Sea salt
6 popsicle sticks or other firm skewers
1 lime or lemon
¼ cup mayonnaise
¼ cup unsweetened evaporated milk
1 chipotle in adobo sauce, chopped finely (about 1 tablespoon, optional)
1 tablespoon white vinegar
2 tablespoons chopped cilantro
Red chile powder to taste (New Mexico or cayenne)
½ cup crumbled Cotija cheese
DIRECTIONS
Cook the fresh corn in a large pot of boiling, salted water until just tender, about 5 minutes. Or cook the frozen corn according to package directions. Skewer one end with a popsicle stick. Cut the lime in half and squeeze the juice over the prepared corn.
In a small bowl, stir together the mayonnaise, evaporated milk, chipotle, and vinegar.
Spread the mixture over the corn ears. Sprinkle evenly with cilantro, chile powder, salt to taste, and cheese, and eat.
